A St. Paul, Minn., native, she has been with Mayo Clinic since 1978, and is director of clinical dietetics and an associate professor of nutrition at Mayo Clinic College of Medicine.
She leads clinical nutrition efforts for a staff of more than 60 clinical dietitians and nine dietetic technicians and oversees nutrition services, staffing, strategic and financial planning, and quality improvement. Nelson was co-editor of the "Mayo Clinic Diet" and the James Beard Foundation Award-winning "The New Mayo Clinic Cookbook." She has been a contributing author to and reviewer of many other Mayo Clinic books, including "Mayo Clinic Healthy Weight for EveryBody," "The Mayo Clinic Family Health Book" and "The Mayo Clinic/Williams Sonoma Cookbook." She contributes to the strategic direction of the Food & Nutrition Center, which includes creating recipes and menus, reviewing nutrition content of various articles, and providing expert answers to nutrition questions.
Katherine Zeratsky, R.D., L.D.
As a specialty editor of the nutrition and healthy eating guide, Katherine Zeratsky helps you sort through the facts and figures, the fads and the hype to learn more about nutrition and diet.A Marinette, Wis., native, she is certified in dietetics by the state of Minnesota and the American Dietetic Association. She has been with Mayo Clinic since 1999.
She's active in nutrition-related curriculum and course development in wellness nutrition at Mayo Clinic in Rochester, Minn., and nutrition related to weight management and practical applications of nutrition-related lifestyle changes.
Other areas of interest include food and nutrition for all life stages, active lifestyles and the culinary arts.
She graduated from the University of Wisconsin-Madison, served a dietetic internship at the University of Iowa Hospitals and Clinics, and worked as a registered dietitian and health risk counselor at ThedaCare of Appleton, Wis., before joining the Mayo Clinic staff.

Go green for the planet

Earth Day is just around the corner, and I've been thinking about recycling.
Although I try to stick to the mantra of "reduce, reuse and recycle," I admit that I can do more on the recycle part. We have a huge recycling bin, but we seldom fill and put it out. I still toss some cans and bottles into the regular trash. So I've decided to change.
In looking into recycling, I found out that the U.S. Environmental Protection Agency has a handy app that estimates the energy benefits of recycling household items rather than putting them in the landfill.
The app translates the energy saved by recycling common food or household containers into electricity with estimates of how long that much electricity can power a 60 watt equivalent compact fluorescent lamp (CFL) bulb, a laptop or other items.
Here are some examples:

This is pretty impressive. It makes me want to take a few extra steps to the recycle bin.
Here are other common kitchen items and whether they can be recycled.

The ability to recycle items may depend on your local recycling provider — so check to confirm the appropriateness of items you want to recycle.

Jerry- calm down. "Shaming" people is non-productive. Why not praise the enlightenment and continue to educate those around you?

I find it hard to believe that in this day and age someone admits to still throwing some cans and bottles into the trash instead of the recycling bin. Shame on you Jennifer. Also, I know several vegans and quite a few vegetarians and none of them throw their diet in my face. I admire them. I've tried and just can't do it, likely from not eating a proper vegetarian diet. Shame on me for not trying a bit harder. There is no doubt that eating less meat is better for the environment.

Why would anyone choose to be a vegan I have no idea. I just get tired of hearing all about it and being in my face. Every activist has their ideas and the rest of us are all wrong. I will continue with my diet and it will include meat. Having made our living raising livestock it really is disgusting to hear all the "so called experts" with their advice.

As a resident of Edmonton, Alberta, Canada I wish to acknowledge and praise the foresight of a lady mayor and who encouraged and enabled us to begin a recycling program. Later City Councils have continued the practise and the new last night mentioned the interest shown in learning how our recycling centre works by groups in China. May we all do what we can.
